Pineapple Mimosa

Brunch season is here, which calls for a mimosa, the day-drinking classic. For a traditional mimosa, all you need is equal parts orange juice and sparkling white wine. Instead of going basic, we suggest making a splash with a dry sparkling white wine and fresh pineapple.
For our batch, we used the juice of one fresh pineapple and one bottle of Fincalegre Cava Brut to make 8 servings.
INGREDIENTS
- 1 fresh pineapple
- 1 750 ml bottle of sparkling wine
DIRECTIONS
- Core and cut up pineapple.
- Place cut pineapple in blender or juicer to blend.
- Pass and press blended fruit through sieve to remove most pulp. The result should be approximately 3 cups of pineapple juice, but measure to be sure.
- Pour juice into carafe or serving pitcher.
- Pour equal parts sparkling wine into pitcher with juice.
- Stir gently and serve.
