Pineapple Mimosa

Brunch season is here, which calls for a mimosa, the day-drinking classic. For a traditional mimosa, all you need is equal parts orange juice and sparkling white wine. Instead of going basic, we suggest making a splash with a dry sparkling white wine and fresh pineapple. 

For our batch, we used the juice of one fresh pineapple and one bottle of Fincalegre Cava Brut to make 8 servings.


  • 1 fresh pineapple
  • 1 750 ml bottle of sparkling wine


  1. Core and cut up pineapple.
  2. Place cut pineapple in blender or juicer to blend.
  3. Pass and press blended fruit through sieve to remove most pulp. The result should be approximately 3 cups of pineapple juice, but measure to be sure.
  4. Pour juice into carafe or serving pitcher.
  5. Pour equal parts sparkling wine into pitcher with juice.
  6. Stir gently and serve.
